Grilled Veggies

Yesterday I grilled some veggies for lunch sandwiches. Cathy was making (read: testing) the sandwiches that get rolled up and baked (as I blogged about on Labor Day.) She wanted to try vegetarian varieties so I picked some zucchini and a tomato and grilled them along with a red onion. We also had some roasted red peppers on hand as well as fresh mozzarella and basil.
